Les prot\u00e9ines  de sarrasin auraient un r\u00f4le \u00e0 jouer  \ndans cet effet, gr\u00e2ce \u00e0 leur  capacit\u00e9 \u00e0 lier et \u00e0 diminuer la  \ndigestibilit\u00e9 des lipides.
